Junmai Ginjo Rice: Yamadanishiki Rice polishing: 60 Alcohol: 14% abv. Yeast: Kyokai No. 9 Second trip to Fukuoka! After all, I enjoy Fukuoka's local sake 🍶. I have the impression that there are many sweet sake in Fukuoka, but this is a slightly dry sake with a similar taste to Hakata Jiman! The ginjo aroma is mild and refreshing! I paired it with sashimi, but it can be served with anything.

At Hirajii's on Uonodana in Akashi City, Hyogo Prefecture. The aroma is classic. Light and light taste in the mouth. Light and gentle flavor. It is a dangerous sake that can be drunk easily.

Unusually at an izakaya. This sake is made by Fukuoka's Kanbokuto Sake Brewery. You may not see it very often outside Fukuoka Prefecture. Cold sake. It has a very smooth and calm taste. There is no acidity, and a hint of sweetness and umami spreads through the mouth. Medium in length, medium in mouthfeel. The aftertaste is normal. Even sake beginners will enjoy its gentle taste.
