I have been interested in the Red Takeshi F. NEW BORN for a long time. Akabu F series is a non-junmai (pure rice) ginjo sake among the Akabu series. There is only one bottle (?). So, I always wanted to try it but had avoided it, but I happened to buy F・NEW BORN by chance! This one was a fresh but drinkable bottle with a great umami and lingering aftertaste, although it was a bit chili, as it is a raw sake! Rice polishing ratio: 60 Alcohol content: 15%.

I opened a bottle of Tamitsu's new variety that has been on repeat for a while now. Tamitsu Junmai Ginjyo Unfiltered Nama Shinkaho A bottle with a fresh aroma and a refreshing grapefruit-like acidity! It was delicious cold after opening the bottle, but after a few days at room temperature, the acidity was lessened and the flavor was more pronounced! Rice polishing ratio: 55% (100% sake brewing rice produced in Mie Prefecture) Alcohol content: 15%.

The Kaze no Mori series was all to my liking, but ALPHA2 is a bottle of Akitsuho polished to 22% and finished with lactobacillus-derived bacteria by Bodo yeast. Kaze no Mori ALPHA2 Konojonaki Hana Junmai Shu Unfiltered Unpasteurized Nama Shu The Kaze no Mori series has an image of being light and easy to drink, but many of them are a bit light and drinkable like cider. ALPHA2 was brewed well and was very drinkable! Rice polishing ratio: 22% (100% Akitsuho rice produced in Asuka, Nara Prefecture) Alcohol content: 14%.

I have long been curious about the "Feelings of Black and White Animals" series. Panda no kimochi" is an excellent assemblage of "Tagaji Junmai Daiginjo Asahi" and "Juhachimori Asahi Junmai Daiginjo", which are both delicious and gorgeous! In between all this, I finally had a chance to drink Kaze no Mori OMACHI 607 CHALLENGE EDITION! Currently, 507 and 807 are the mainstream of Kaze no Mori, but this is a test brew of 607 with 60% polished rice. This is a test brew of 607 with 60% rice polishing. It was sold as a regular item in the past, but it seems to have disappeared recently. When we opened the bottle, we heard a pleasant popping sound that is typical of Kaze no Mori. And when you pour it into the glass, you can feel the fizzy bubbles spreading inside the glass! The first sip has a rich sweetness and deliciousness typical of Omachi, with a light sharpness and aftertaste. The alcohol content is 16%, so be careful not to drink too much! We received fireworks by Hato Masamune, a.k.a. "Hato Poppo," which we have been curious about for a long time! It is a sparkling pure rice sake made with Aomori Prefecture's Hanabukiyuki rice, which is suitable for sake production, and is apparently produced in a limited edition of 920 bottles. The package has a cute dove motif and an illustration of fireworks, making a big impact! When I tried to open the bottle, there was a sign on the cap that said "Caution when opening the bottle"... I opened the bottle with trepidation, and although there was no spillage, I had to pour it slowly. The taste was a bottle that popped when poured into the glass, and although the aroma was subdued, the milky sweetness of the rice and unique lactic acid taste cut through beautifully in the mouth. In the hot summer, I would like to drink it chilled, but it has an alcohol content of 15%, so I enjoyed it with a sip. Rice polishing ratio: 60% (100% Hanabukiyuki rice) Alcohol content: 15%.

I'll have a bowl of Tamitsu, which has been on my mind for a while. I've been drinking at a pretty high pace this week, and I think I may be drinking too much (sweat). However, Takamitsu is one of my favorites that I've had so far! The top aroma is not too assertive, and while the sweetness is restrained when you take a sip, the umami and mild acidity that develops from there, and the balance that finishes off pleasantly, is something that I think no one would dislike. Of course, it is also perfect as a food wine! It was a bottle of smoldering silver. Rice polishing ratio: 60% (100% domestic rice suitable for sake brewing) Alcohol content: 15%.

It's getting hot, so we opened a bottle of Romain's Daju. It has a very mild sweetness and umami because it is fire-brewed twice, and it is very crisp and dry when drunk cold. I thought it might be good as a hot sake, so I raised the temperature and found it was even sweeter. As we raised the temperature, the sweetness remained, but the dryness became more pronounced. It was a dryer version of roman than the gorgeous roman we usually drink.
