Kumakichi
I'll have a bowl of Tamitsu, which has been on my mind for a while.
I've been drinking at a pretty high pace this week, and I think I may be drinking too much (sweat).
However, Takamitsu is one of my favorites that I've had so far!
The top aroma is not too assertive, and while the sweetness is restrained when you take a sip, the umami and mild acidity that develops from there, and the balance that finishes off pleasantly, is something that I think no one would dislike.
Of course, it is also perfect as a food wine! It was a bottle of smoldering silver.
Rice polishing ratio: 60% (100% domestic rice suitable for sake brewing)
Alcohol content: 15%.
