Comparison of Kangiku. Next was Blue Sapphire, made with Yamadanishiki and Gohyakumangoku. It is also fresh and juicy, but the taste is between Identity and Adapt, and I prefer this one the best in terms of the balance of sweetness, umami, and acidity.

First time drinking Akabu Sake Mirai. It has a silky, melon-like sweetness that is typical of Akabu. As the temperature rises, the acidity becomes apparent.

The 1500 check-in was a comparison of Jikin. Omitted the Omachi since we drank it last week. Hachitan-Nishiki has acidity and a crisp, clean taste. Personally, I prefer Omachi.

It is said that the letters on the label are reversed to mean that it is a sake to be drunk during the season behind the brewing of sake. It has a freshness and the roughness of a raw sake, but it has a strong soft, sweet, umami juiciness. There is also a hint of acidity, but if you ask whether it is typical of summer sake...?

Fresh mouthfeel. It is juicy and has a rice flavor typical of ogara-mi with a crisp acidity. The final stage has a strong sense of nama-zake.

Re-drank at home on 8/27. The nose is slightly cemedai. The supernatant is slightly fresh, with a juicy sweetness that is reminiscent of apples and pears. When it is mixed with ori, a soft graininess is added. The acidity is weak.
