First drink at the sushi bar. Nice sake, too good for the first drink, but top notch as a top drinker. It has a nice umami flavor, but it is not heavy. It has a sharpness, but not at all like it is forced to be sharp by bitterness or acidity. It's a complete sake.

The third cup was Houou Mita WINE CELL, which, as the name suggests, has a fresh taste with white wine-like acidity and bitterness combined with the delicious flavor of rice. It has a beautiful taste with a nice sharpness, so it is perfect as a closing drink. You may be tempted to think you can drink more, but it is important to control yourself.

The second drink is a yui with laughing characters. I like this label. The taste is clean and clean, sweet and delicious. It is my favorite flavor. The meal was great as the nigiri was just starting and the atmosphere was very exciting. Even though the sake has such a pronounced flavor, it goes well with the food. It is a marriage of the skill of the owner and the skill of the sommelier.

The first drink at a sushi restaurant. Mr. Yamamoto also has a good beer. This is my first time to try orange. I think it is one of Yamamoto's richer flavors. Yamamoto has an image of being rather dry, but Orange spreads the umami of the rice and disappears quickly. It is like a crisp special junmai. It is delicious.

The last one is Ippakusuisei Aizan. I like the Ippakusuisei label. This was probably my first Aizan. I was already quite drunk, so my impression of the taste is a bit vague, but it has a strong sweetness and umami, and seems richer than the other Ippakusuisei I have had so far. I like the taste. I wonder if it is made to go with conger eel and eggs.

The second cup is a Junmai Daiginjo, Hakurakusei. It is a nice, crisp Hakurakusei that resets the palate just as the nigiri is about to begin, and the aroma is more subdued than the first HIROKI, allowing the food to take center stage.

It's been about two months since I've been to my favorite sushi restaurant. The heat these days is extraordinary, so we started with a beer to quench our thirst before the first round of drinks. What came out was a Junmai Daiginjo of Tobiroki, and like the #1 pitcher Otani, the boss appeared out of nowhere. It was a perfect match for the first tsumami, and the exchange of umami started right from the start, invigorating the palate.

It is a kind of in between the first cup of Utashiro and the second cup of Ko-Imari. The alcohol content is low, so it is light, but the umami and sweetness of the rice can be felt. It is a satisfactory selection as the third cup to finish the meal.

Perhaps because the first cup was quite refreshing, the second cup of Ko-Imari was mellow and rich. But it is not heavy and has a sharpness. The fresh scent of ginjo aroma doubles your appetite. It is a sake that makes your meal go down a treat.

I always thought it was "Gagakudai" or "Utashiro". I had it as my first drink at a sushi restaurant. The alcohol content is low, so it is very smooth. But it is very drinkable and has a clean sweet taste. It also has a certain amount of sharpness, making it my favorite type of food sake. I would like to try a different Utashiro.

The last one is Gobashi. Yamaguchi's sake is delicious. It has a full, rich flavor with a nice sharpness that never gets old. The aroma is subdued, and it goes well with sushi. It is not flashy, but it is a reliable sake that does its job well.

The second glass was Kameizumi. The label reads -11 on the sake scale, which I thought was pretty sweet. I thought, "Isn't it pretty sweet?" but when I drank it, I found it to be very mild rather than sweet. I guess the sake meter is not a simple indicator of sweetness or dryness. In many cases, the sake is not disclosed to the public, and it is important to try it if you are curious about it, considering that you may miss out on this kind of sake if you try to judge it only by its specs. However, when I buy sake on my own, I am inevitably concerned about numerical values, so I am happy that I can find sake that can be recommended at such a reliable store.

We went to a sushi restaurant for the first time in about two months to celebrate the wife's birthday. The first drink we had was Oze no Yukidoke, which is a kind of strawberry ore. The foreigner next to me was surprised at the impact of its appearance and ordered the same thing. The taste was not as sweet or cloying as it looked, but rather refreshing with a light sourness and a beautiful sweetness. It was a delicious sake that easily absorbed the unique complexity of nigori.

The second label with a bad taste. This is the one I've been debating whether or not to buy. I should have bought it. The balance of clean, umami and sweetness is just right. It might taste different if I drink it at home because of the delicious sushi and the great space...

Glorious Fuji at Sushi from noon. The taste is rather punchy. The label of Eikoufuji is amazing, but the inside is just as assertive as the outside. It is rare to find a Daiginjo with such a strong flavor. It is addictive and strong, but not at the point where it fights with food.

Since we had drunk half a cup each, we wanted just one more. So Isojiman came out. It is my favorite sake. The overall balance is very good, and it has a nice sharpness. A model sake. Everything was delicious from start to finish.

The second cup I asked for omakase. Urakasumi with a stylish label. It is a Junmai Daiginjo, so it has a clear and sharp taste. The aroma is moderate and easy to drink. Since it was lunchtime, I asked for a half gou, but I should have asked for a full gou.

Everyone around us was a foreigner. We had no choice but to have lunch because we could no longer get a reservation. It was really luxurious to have sushi and good sake for lunch. The first sake was the stablemate, Ganki. It is a very dry and refreshing sake, but it is very tasty and full of flavor. When in doubt, go for GANKI.
