I visited Araiya Brewery for an in-store tasting of Sekiya Brewery's sake, which I couldn't taste because I had to drive afterwards 😅. Sake that has been aged for only one year and bottled. I tried to hold off on opening it until New Year's, but my fridge was at capacity 🤣🤣 so I opened it 😅. Well, the aroma is green apple 🍏, soft mouthfeel, fresh sweetness and delicious flavor with a sourness that slowly builds up ✨. On the second day, I think the sweetness has deepened. I've read that it's recommended to cool it down a little bit, so if you let it sit for a while after pouring it, the sweetness and umami will deepen and become more intense ✨.

My first Toyama sake. Hachitan Nishiki from Hiroshima and the sunset at Miyajima, the jacket is beautiful and perfect. You can feel the respect for Hiroshima. The taste is also unquestionable. It was delicious, with a slight gasiness and sweetness that spread to the palate, followed by acidity.

I bought this sake because it was praised by Sake Sento Horiichi and I was curious about it. I had never had moromi sake before, but it was a thicker version of nigori (nigori), and while it was very drinkable, it was not too sweet and had a nice balance. There are some bumps at the bottom of the glass, which gives you the feeling of eating rice like amazake!

Here it is! Our favorite Kangiku brewery brews a very limited series of unfiltered unpasteurized sake only once a year! Buy two bottles of TRUE White and TRUE RED and compare them! The basic specs are the same, with the same rice polishing ratio and 100% Omachi, but the RED is ogurimi, while the WHITE has no ogurimi. WHITE had a gorgeous flavor with a refreshingly clean sweetness and acidity, and was a magical sake that was easy to drink! Compared to RED, it was characterized by a less gassy, less chuggy taste and a clean sweet flavor with no cloying taste. It was delicious, too delicious, a bottle. Alcohol content: 15%. Rice polishing ratio: 50% (100% Omachi is used)

The first Kino-ene was "Sense of Wonder," which I bought the label for. The impression of the clear and crisp, as you can imagine from its appearance.... The first sip revealed a refreshing melon-like aroma with a fresh, shwashy gas. The acidity and bitter complexity of the wine seeps in from there, and it finishes with a sharp kick. I was able to get a bottle of Kankiku's super limited edition sake that I've been eyeing for a while on my regular walk around my favorite liquor store! It's an unfiltered, unpasteurized Junmai Daiginjo made with 50% Yamadanishiki from the super limited Occasional series that Samgiku Meijo only releases once a year. I was looking forward to my first taste of this famous sake that has always been recommended on this Sake No Wa app! A nice little popping sound when you open the bottle! The light nigori color of the origarashi poured into the sake cup gave me the impression that it was full of my favorite umami! A quick sip, and... It's delicious! Banana? Not only does it have the sweetness of ripe fruit like bananas, but also the acidity and bitter aftertaste that spreads smoothly. I think I could go on and on without a snack! Rice polishing ratio: 50% (Yamadanishiki) Alcohol content: 15 degrees

I opened a bottle last week and forgot to post it, and it's the limited time version of "Oze no Yukidoke", "Rosé no Yukidoke". It's a Junmai Daiginjo with a color, sweetness and acidity like strawberry juice, only with a different yeast. The color is like this, but it is a Junmai Daiginjo without any mixture. This is one of the most popular bottles for Christmas and Valentine's Day, but we were able to purchase a few bottles that came in out of season! We opened a bottle of Niidashi Zenshu no Gori Sake yesterday, and today we opened a bottle of Meron 3.33, which had been sitting in the refrigerator. Melon 3.33, which is becoming synonymous with natural sake, was as sweet and ripe as its name! The aroma is thinner than I expected, with just a hint of fresh fruit. When you take a sip, you get a light gasp and a rich sweet flavor at the same time. Melon and banana like thick sweet ripe fruit juice! Nigori-shu made with no added yeast (brewer's yeast) and 100% pure natural rice. [Niidashi Zensyu = melon] I imagined it on my own, but this nigorizake was full of great concentration! You can clearly see the thick cloudy white color even before mixing it, and it looks delicious, so it was one of those bottles I bought on impulse! After mixing it thoroughly from the beginning, I took a sip. As soon as you put it in your mouth, you can feel the thick rice spreading in your mouth! Does it smell like lactic acid? It smells like sweet milk, and when you put it in your mouth, the mild flavor spreads out more than the sweetness! There is no melon taste at all! More than anything, it was a cup full of rice flavor that you can enjoy! It's going to fill you up! Rice polishing ratio: 80%, Alcohol content: 16 degrees It's an aside, but the liquor stores in our town Itabashi Ward are hot.
