I finally had a chance to drink it, Asahi Kohshin! My impression is that it has a refreshing taste that is easy to pair with meals. Not too dry, but not too assertive and easy to drink.

The Wind Forest is soooo good! It has a strawberry-like sweetness. When it gets to 807 Yumachi, it has too much individuality and is a little bit dull, so 607 or so is just right!

First Gunma Spring! Smells and tastes like brown sugar, like Shaoxing wine! So this is Gunma Izumi! I guess it converges to this kind of taste when it matures, similar to Shimazaki Shuzo's Mature Rouge Kare!

This year's Risshun pressing is delicious! The flavor is juicy, crisp and muscat-like! The hardness or bitterness is noticeable after the middle part of the flavor, but I guess that's because it's freshly squeezed.

I've been really curious about Senkou's Green Naturals. The specs and the way it is made are very intriguing! Compared to Naturals, it is very light and easy to drink. The aroma and taste are a bit peculiar. I don't know what the origin of this is, but it tastes different from regular naturals and other sengkyo.

Souhyo Tokujun Namazake! It's only available at this time of year! I can't compare it to cold sake because I only drink the hi-ire version heated or at room temperature, but it has a green apple taste on the palate, although it feels heavy! I thought it would be more classic, but it's not. When heated, it has a delicious aftertaste with a hint of rice, but the alcohol is still very strong.

Jay & Nobby I also live in Tochigi. I used to drink mainly easy-to-understand and tasty sake, but recently I've started to notice the goodness of smoky sake like Souhyo and have started to try it!
