Purchased at a brewery in Hirado.
Sake made with beer yeast.
It is very sweet and does not taste like sake. It is a daiginjo-shu, so it is clean and not too sweet. It was delicious.
This is a fantastic sake that is rarely distributed in the market. It is said to cost about 200,000 yen per bottle. With a rice polishing ratio of 35%, it had a clean taste with no harshness and almost no alcohol. It was rather sweet.
Sake with a lot of habit. It is hard to describe, but it has a thick, soy sauce-like flavor and thickening. It was not my personal favorite, but it was so strong that I recorded it here.
Iki is known for its barley shochu, but this is a rare (or is it the only?) sake brewery. This is a sake brewery. It is sweet and very easy to drink. It goes well with Shimabara's famous sea urchin beans.
