Miyakanume. It is a sake that is so familiar to the body that it is the number one liquid I would like to have intravenously injected instead of saline solution if I could not get it.
Among Miyagi sake, it has the best balance of sweetness and umami. It has a refreshing umami at its core, the kind you get when you take a bite of raw rice, and at the same time, it has a pleasant, gently swaying umami that drowns out the greenish smell, inviting me to a paradise.
I guess it is also very nice to see the plum blossoms after the Mid-Autumn Moon has passed.
