Special Junmai A Urakasumi, a sake brewed in Shiogama, has a counterpart, "Un", but we were unable to obtain it. Too bad. First of all, note the cool label. It was created by Emi Ichinoseki, an ink painting artist based in Sendai. The motif of this ink painting is a ship named "Ryuhomaru," which appears in the Shiogama Minato Festival. As someone with a connection to Shiogama, this sake is a delight to drink. It is the usual Abe-kan, which is not glamorous, and even rugged. It has no habits, but if you ask me if it is easy to drink, I can't answer that it is. It is a full-bodied type of sake with umami as its main flavor, but its assertiveness is very modest. The sweetness and acidity are moderate. The aroma and sharpness are not that great either. And yet, it is so delicious that there is no other way to pair it with tuna but with Abe-kan. The characteristics of this sake are that it is very smooth. The impression one gets when drinking it is very similar to the texture of Morozoff-type steamed pudding. Why is that? You really don't know what I am talking about, but it has that texture of steamed pudding, or rather, of a very soft chawanmushi. If you think I'm lying, or even if you think I'm telling the truth, I urge you to give it a try.

Exclusively for glasses This sake comes with a glasses-wiping cloth. One might be told to put all that time and effort into sake, but this is the trustworthy and proven Hagino Sake Brewery. It has a light sweetness that is easy to drink without any habits, and a clear taste that makes you feel as if you can look into the sky. The aftertaste leaves a mild umami taste that goes well with the cool breeze. It is a very dangerous sake, the type of sake that you will find yourself drinking four cups of while indulging in a long autumn night.

Sweet, strong, and delicious. Miyakanbai is one of the three most beloved sake in this world. It is a junmai ginjo, so it has a refined taste but a strong presence, and its appearance, which demands a head-on confrontation from the first sip to the aftertaste, is that of a nobleman or a powerful family. Although it is not suitable as a food sake, it is so rich in flavor that you can enjoy it as much as you want with just this sake and water.

Junmai Ginjo Sasara Autumn. The season of hiyaoroshi. In other words, the season of sasara. This is the label we have been waiting for. Our own Shinzawa Brewery has released a cold wholesale version of the Atago no Matsumatsu series. The taste of Atago no Matsumatsu, which is well-balanced and deep without any sharpness, has been retained, and the soft and round impression of the cool autumn breeze has been strengthened. The presence is not strong, but the taste is too rich to be called a watery sake, and although it does not spread in a spectacular manner, it has a relaxed and calm taste. It is a noble sake that makes us feel the afterglow of summer, the anticipation of autumn, and the happiness of the four seasons, even with our drunken heads.

Junmai Daiginjo premium2022 My favorite brewery in the world. Happiness in a form that conforms to the laws of hydrodynamics. Just as the aristocrats of the Heian period used 31 characters to express all their thoughts and feelings, three characters are enough to describe this flavor. All other words are superfluous. Just be intoxicated.

Junmai Ginjo Kame-no-o This sake brewery is located in Shiogama City, Miyagi Prefecture, but there is a very famous brewery called Urakasumi in the same Shiogama area, and as an Abe-kan fan, I tend to feel a bit lonely. I am of the Abe-kan school, so I tend to feel a little sad about it. It is difficult for me to give an opinion on the taste of this brand because I have drunk it so many times, but it is a brewery that makes very honest sake. The sake is made with a single-minded foundation, and the flavor of the rice is fully expressed in the sake. It may be a little far from glamorous, but the time you spend enjoying it with sashimi, thinking of the port town of Shiogama, is a time of great happiness.

The taste is complex and strange, with about three cups of sake in one glass. Yet, it has good harmony and detail. There is a faint aroma of grapes, and the fresh sweetness and refreshing aftertaste bring the whole thing together. It is seamlessly delicious from start to finish.
