SEASONⅡ episodeⅡ YAMAWA style This is a project in which seven breweries in Miyagi Prefecture collaborate once a year to brew sake. The leader brewery changes every year, and this year's project, the ninth year of the project, has a total of two breweries, each led by the Yamawa Shuzo and Hagino Shuzo breweries. This is Yamawa Shuzo's version. Every year a very high level of sake is brewed, and since seven of our favorite breweries are gathered here, we already know that it is delicious, and the question is how delicious it is. The taste of this sake is so perfect that it easily surpasses such high expectations. It has a slightly refreshing aroma and a soft taste. While the mouthfeel is sharp, it is not what is called a sharp taste, but rather a flavor that is very important. It is followed by a refreshing bitterness and acidity reminiscent of citrus peel, and leaves a gentle aftertaste of umami with a hint of sweetness. While based on the usual Yamawa flavor, the taste has been extended in the direction of the gorgeous and rich umami that I like. It is a versatile sake that can be enjoyed with food or just with sake and water. I am deeply humbled by the efforts of the sake brewers in my hometown of Miyagi, and I am proud to be a member of my hometown, and I am happy to drink this sake again tonight.
