I picked this up out of curiosity because it was clearly different from the others.
Hops are listed as an ingredient. The rice polishing ratio is 90%. The aroma is like beer. When poured into a sake cup, it has a cloudy light purple color. What is this?
The taste is also difficult to understand. It has a fresh and fruity sweetness like nigori sake and the deliciousness of rice as its base, while the bitterness of hops tightens the whole flavor and brings it all together sharply.
Despite all this, the overall cohesiveness is beautiful, with a high degree of perfection that allows the taste to flow as a single continuous stream without being scattered around.
The hops do not make it a beer, but it is not confined to the framework of sake either.
It is a taste that expands the world.
