Junmai Daiginjo Sanmai Hashi
Read as "sanmai hashi". It is said to be a sake brewed by combining three different types of rice to produce eight different tastes. It is a delicious sake made by Miyakanbai, one of my favorite sake brewers in Miyagi Prefecture.
It has a very elegant taste, which is due to the fact that it has been polished. It has a solid sweetness in its base, which keeps the overall flavor from being diffused. Naturally, the sweetness is not overpowering and does not detract from the elegance of Junmai Daiginjo, but the taste is deep and fragrant, and the aftertaste is full of the umami of the rice.
The complexity and strangeness of the flavor is truly a masterpiece, just as the name "eight delicious flavors" suggests. Oh, our Miyakanbai. Praise be to Miyakanme.
