SEASON II episode II Haginotsuru style This is a project in which seven breweries in Miyagi Prefecture collaborate once a year to brew sake. The leader brewery changes every year, and this year's production, the ninth year of the project, has a total of two bottles, with Yamawa Shuzo and Hagino Shuzo each serving as leader. This is Hagino Shuzo's version. The Yamawa Shuzo version was very tasty, but I usually drink Haginotsuru more than the Yamawa version. Therefore, we had higher expectations for this one. The taste was so good that it could not be better than this. Based on the usual Hagi no Tsuru, the flavor is extended in all directions, and yet the overall balance is perfect. It has a sweet and gorgeous aroma and mouthfeel. The body is full of freshness and richness. The outer frame has a hint of acidity and a pleasant umami aftertaste that spreads gently. The taste, which shifts from beginning to end with sweetness at its core, without becoming boring or clingy, scores 500 billion points out of a perfect score of 100. I could not help but smile at the taste, which was right in the middle of my tastes, not to mention the perfection of the sake itself. Can such a delicious liquid really exist? Is it not a dream? I am just grateful for the encounter.
