Taiwagura Sake Brewery (Taiwagura) is a new sake brewery founded in 1996 in Yamato Town, Miyagi Prefecture. The Umi series was created with the freshly squeezed taste in mind, and in addition to Yamada-Nishiki, there are a total of four varieties: "Gin no Iroha," "Kura no Hana," and "Hitomebore.
This time we had the Yamada-Nishiki. At the refrigerated temperature, it had a strong sweetness, but as it returned to room temperature, I enjoyed the change in flavor, which was smooth and fruity!
It seems that the product brewed with Hitomebore won first place in the Junmai sake category at the recent SAKECOMPETITION 2023, so I would like to try the Hitomebore version as well (^^)

Compared to the junmai ginjo (Hakuten) we had previously, this special junmai (Kuroten) has a stronger umami of rice and is more mellow. I personally prefer it with a meal.
A new product from Ichinokura, made with Sasanishiki rice grown in Miyagi Prefecture. It has a fruity flavor typical of sake brewed with Sasanishiki, but it also has a refreshing taste, making it perfect for a mealtime drink 🍶.
This sake is bottled by Sake no Kawashima (Sendai City) at the request of the brewer, and is available only at sake shops. The Yamahai Junmai that is usually sold is a clean and less habitual sake despite being Yamahai, but this sake has a lactic acidity and is very drinkable because it is an unfiltered pure sake (*^^*).
This special junmai sake is made from Sasanishiki rice produced in Miyagi Prefecture. It has a good balance of rice flavor and fruity taste, and is available for about 1,500 yen. It is a cosy, local sake from Miyagi Prefecture in Tohoku.
I drink it cold, but it is a versatile sake that can be enjoyed at various temperatures. The box and label are very classy, so if you visit Miyagi, be sure to buy some as a souvenir!
Junmai Daiginjo Sake brewed by a sake brewery (Shinzawa Brewery in Miyagi Prefecture) using Miyagi Prefecture's best rice for sake brewing.
This year, it seems to be sweet, fruity, and quite mellow (^^).
Koganezawa is a brand that has become my standard for sake. Junmai Ginjo is a classic Junmai Ginjo sake with a fruity taste with a delicious rice flavor 🍶.
In my opinion, this sake is like a benchmark for sake.
When chilled in the refrigerator, it has a clean dry taste with a fruity aftertaste, and as it returns to room temperature, the umami of the rice comes out.
It is a cosy sake that can be purchased for a little over 1000 yen 🍶´-.
One-cup special junmai sake labeled with "Chocoemon," the tourism PR character of Kawasaki Town, Miyagi Prefecture, where the brewery Niizawa Brewery was ranked No. 1 in the 2022 Sake Brewery Ranking.
It tastes soft and delicious. The one-cup is nice and gentle on the palate 🍶´-.
On New Year's Day, 2023, we will drink a limited amount of local sake.
It is an "emoii (precious)" sake, as the brewery puts it nowadays, that is filled with the gratitude of the local people who have long wanted to enjoy the sake at the head office.
It is a very tasty sake with a refreshing yet unadjusted roughness of freshly squeezed and unadjusted sake, with just the right amount of acidity and the umami of rice to make it worth drinking 😋.
The Niisawa Brewery was the number one sake brewery in the 2022 World Sake Brewery Rankings. We were able to see the symbol of the competition, the "Daihai," when we purchased the sake at the head office's direct sales counter (^^).
The subtle bitterness is fruity like grapefruit. It is so refreshing to drink without any cloying taste that it is hard to believe that the rice polishing ratio is 80%.
In December, it was the most shockingly good taste of the year 😋.
