Picus(ピカス)Taiwagura Sake Brewery (Taiwagura) is a new sake brewery founded in 1996 in Yamato Town, Miyagi Prefecture. The Umi series was created with the freshly squeezed taste in mind, and in addition to Yamada-Nishiki, there are a total of four varieties: "Gin no Iroha," "Kura no Hana," and "Hitomebore.
This time we had the Yamada-Nishiki. At the refrigerated temperature, it had a strong sweetness, but as it returned to room temperature, I enjoyed the change in flavor, which was smooth and fruity!
It seems that the product brewed with Hitomebore won first place in the Junmai sake category at the recent SAKECOMPETITION 2023, so I would like to try the Hitomebore version as well (^^)
