Picus(ピカス)On New Year's Day, 2023, we will drink a limited amount of local sake.
It is an "emoii (precious)" sake, as the brewery puts it nowadays, that is filled with the gratitude of the local people who have long wanted to enjoy the sake at the head office.
It is a very tasty sake with a refreshing yet unadjusted roughness of freshly squeezed and unadjusted sake, with just the right amount of acidity and the umami of rice to make it worth drinking 😋.
The Niisawa Brewery was the number one sake brewery in the 2022 World Sake Brewery Rankings. We were able to see the symbol of the competition, the "Daihai," when we purchased the sake at the head office's direct sales counter (^^).
