I found it to be my personal best of what I drank today. Compared to Hakuginkai and Jyushiyo, it has a structure (dry sharpness) that is typical of sake, in a good way, and this moderate dryness makes it more satisfying when paired with a meal.
Although the taste was somewhat dry, it had a beautiful sharpness, and was a clear and easy-to-drink gem without any cloying taste.
The gorgeous aroma, clear and soft sweetness, and graceful sharpness maintain balance at a high level. It is truly a bottle of perfection.
When you drink it, everything is crystal clear, yet it is a pleasant sake with just the right amount of assertiveness.

The second day after opening, the aftertaste becomes milder and different. This makes me drink it with gusto.

I was not fond of fruity sake with too strong an aroma, but this time I was able to enjoy it very much.
Especially, it was a perfect combination with ankou-nabe (anglerfish stew).
