Junmai sake [Wa-no-jun)
Liqueur [Jokon)
Junmai sake "Wa-no-jun" is frozen in a special freezer to separate the water and alcohol content.
The alcohol content is close to 40%.
The production process is almost the same as that of sake, but legally, it cannot be labeled as sake, and must be labeled as a liqueur.
As a whisky drinker who enjoys whisky straight or on the rocks, I found it to have a familiar taste.
I had the good fortune to meet the person who designed the "special freezer," and he recommended that I buy two bottles.
Wa no mellow
It has the acidity and pleasant spiciness typical of junmai sake, and you can fully enjoy the flavor of the rice. I have been drinking fruity, highly polished sake recently, so I was very pleased with the taste of junmai sake, which I have not had for a long time.
