Wakabayashi Brewery just resumed sake brewing in 2015. They recently won awards in Japan and abroad and were featured prominently in the local city's PR magazine. This year, they sold "Tsukiyoshino White," which won an award in France? The "Tsukiyoshino White," which won an award in France this year, was already sold out. Too bad.
Aroma
Fruity ginjo aroma.
The aroma is sweet with a hint of sourness like green apple, muscat, grapefruit, and LaFrance.
The softly sweet alcohol taste is unique to the sake.

Sweet and delicious with a hint of sourness.
It has a sweet taste of apple, sweet lactic acid beverage, grapefruit, and the alcohol taste of raw sake.
In addition to the alcohol taste, bitter and pungent tastes appear on the tongue and in the nasal cavity, and they expand!
After swallowing the sake, the aforementioned alcohol, bitterness, and pungency appear to cover the fruity sweetness and umami sensation felt on the palate, creating a surprisingly dry feeling that finishes with a kick...that's how it feels.
Summary
This "Tsukiyoshino no Hana" is said to have a negative sake degree, but I got the impression that the pungency and bitterness were easily perceptible in the aftertaste!
This sake has everything: fruity sweetness, bitterness, and spiciness!
I'm curious to see the rest of the lineup!
