Yumemizuho with thoughts of Noto. Scent. A clean, sweet aroma. Ripe apples, peaches, pineapple, and pine muscat. The aroma is not so strong, but it is certainly fruity and reminds us of sweetness. Taste It has a pleasantly shwashy mouthfeel. The first impression is smooth and sweet. Honey, peach, sweet Shine Muscat with almost no sourness. The sweetness of rice and rice cakes. Somewhat sweet lactic acid bacteria drink. When you put it in your mouth, the sourness follows. However, once the sake has been swallowed, the acidity is very sharp and does not leave a bad aftertaste. The pungency is very slight and almost imperceptible. Finally, the sweetness felt on the palate gradually fills the mouth in the aftertaste, a blissful golden time. Summary. Sweet, refreshing and fruity sake. Is this a difference in the brewing process or a characteristic of Yumemizuho? The acidity was a little stronger than the Shinshu Kamerei sake I drank before. It is the Shinshu Kamerei, which is very popular right now. Of course it has acidity and spiciness, but they are only there to enhance the sweetness mentioned above. No wonder it is so popular in the sake world. Yes, it is pleasantly sweet even after drinking it again. Yes, it is delicious in every way.
