Junmai Ginjo made with local Yamae Nishiki from Takeishi, which is currently suffering from forest fires.
The aroma is fruity.
The taste is sweet and delicious. It is not only fruity, but also has a strong rice flavor.
The middle part of the taste has a sourness, a slight bitterness, or spiciness? Pungency?
There is also a sense of sake.
A well-balanced fruity sake.
The yeast used is Ogawa No. 10 developed by Meiri Sake Brewery, which I respect very much.
For those who like fruity sake, I recommend "Tsukiyoshino" by Wakabayashi Brewery in Shioda, Ueda City, Nagano Prefecture!
