The Takashi family, one of the five regent families, asked the brewer to present sake to them, and the sake was highly praised by Masamichi Takashi, the Sekihaku (Chief Sekihaku) of the time, who gave it the name "Hakubotan" after the family crest, "Peony".
It has been nine years since I last tasted Shirobotan. I had an image of Shirobotan as a sweet sake, but I have never tasted such a refreshing sweet sake. It is very easy to drink, and has a spicy, refreshing sweetness.

I was shocked and impressed.
I drank it on the rocks and sipped it. It has a great flavor and is not junmai, ginjo, or honjozo, but it's still a delicious sake 😂.
