The umami has a weak bitterness that is followed by acidity.
The bitterness lingers in the aftertaste.
This sake also becomes gentler after a little time than right after opening the bottle, so you can keep drinking it somehow.
Not Mr. Nakanori, but apparently Mr. Nakanori.
The aroma is mellow, like a cross between grapes and yogurt.
There is some bitterness in the mid-palate, but it has a good pull, so it is easy to drink.
Good with food.
I bought this wine after liking it in a drinking contest at a previous visit to Nakazen Sake Brewery.
For a family dinner
Sake rice is Yamae Nishiki.
The aroma is cool and refreshing, with a hint of green apple.
The sake is easy to drink with a slightly thickened, yet refreshing taste, with a hint of sourness and sweetness.
The second half has bitterness and a yogurt-like richness that makes you want to keep drinking it.
Alcoholic feeling that comes after it goes down your throat
I thought it would be too much after drinking Beau Michel, which is a low-alcohol beer, but it was perfectly fine!

Seishun 18 Ticket Travel Nagano Prefecture Kiso Fukushima
We got three different kinds of drinks from the direct sales store.
(1) Kaze Koshi Aoarashi Junmai Ginjo Namaisouzou Sake
It has a mellow and smooth taste with a clean aftertaste. The bitterness tightens it up at the end. The fruity aroma is pleasant through the nose.
(2) Kaze Koshi Seiarashi Junmai Ginjyo Nama Genjozo
This is a 1) pure sake. It is thick and rich, with a slight yogurtiness and a strong fruity, sweet and sour taste.
It was very easy to drink and did not have a strong alcohol taste.

As expected from such a polished sake, the silky texture on the tongue is exceptional. The melon aroma permeates throughout. It has a strong alcohol taste.
We wanted to visit Nanasho, but it was pouring and we had to leave. ⛈️

I found this sake at the first liquor store I visited on a recent expedition to Nagano Prefecture.
The label sticker said "Fuki" in red, so I thought, hmm? What is this? The hijirizumu? I thought, and bought it.
I thought it would take a long time to open the bottle, so I was right to prepare a ball.
The bottle overflowed with such force that it looked like a whale spouting. Please refer to the photo.
The taste was as I had expected, and it was in the same category as the hijirizumu.
It is not as sweet as hijirizumu, but it is moderately sweet and tasty.
The gasiness can be described as "Wilkinson" lol.
There are still a lot of sake in the world that we don't know about.

Brewed by Nakazen Sake Brewery in Kisodani, Nagano Prefecture, this is a bottle for the 2024 Hanpukai made with Yamae Nishiki grown in-house.
It has a muscat aroma with banana nuances on the nose,
In the mouth, it has a mild texture with a slight dustiness, which is the result of the soft water drawn from the side well in front of the brewery from the abundant underground water in the Ontake mountain range.
The fruity sweetness and beautiful acidity are refreshingly clean and crisp with a tight bitterness. This is delicious!
Lactic acidic flavor, sweet and slightly bitter with a sharp taste.
