This is an autumn sake targeted in its name to be drunk with Akitonou fish.
It is designed to be paired with fatty swordfish, which gives it a strong umami flavor. Am I right?
It is a beautiful sake with acidity, so it has a lot of flavor, but the second half of the sake is very smooth.
It certainly goes well with the Akinatai fish! This kind of thing is a strategy.

On this day, a crab party was held with friends.
There were a total of nine people from Tokyo, Hida Furukawa and Toyama. We had 7 four-packs and 1 one-pack of sake to save space in our fridge 😅.

The bottom of Toyama Bay seems to have collapsed due to the Noto Peninsula earthquake on New Year's Day, and the crabs are still not caught. The fishmonger managed to procure some for us in time 😄 just no surface 🦀.
Echigo Kenshin SAKE Festival 2024 13
Kubiki Shuzo was in charge of this year's SAKE Festival limited edition sake. We were able to get in line a little after noon 😄.
The sake we tasted was Hana to Yuki. It was a Junmai Daiginjyo, raw and hi-iru (hi-iri) 😋.
Demonstration of dashimaki omelet. There was quite a line for this. Other than that, the limited edition mentshi from the meat shop was delicious. ✌️
Purchased at Niigata Sake no Jin OSAKA
When I tasted it, it seemed sweet and tasty, but the sweetness was moderate and the sake was fresh and juicy with a slight spicy gasiness. I thought it had more impact when I tasted it 🤔.
I like the overall impression, but it seems much spicier than when I tasted it.

The first glass was a tasting of Koshiji-no-Kenbai Namaishu.
It is made from 100% Hachitan-Nishiki No. 2 and has a milling ratio of 60%.
It was so delicious that we decided to purchase it.
It tastes good enough on its own, but I wonder if it would be better with saury as recommended. ☺️
