be in a hazy state for the first time The timing is perfect, as the snow that has been falling is now melting due to the high temperatures. (According to the 72 weather signs for the year 2025, it will be on February 23. This year, February has been snowing heavily every day, so the season seems to be a bit delayed.) It is light nigori, with a slight carbonation. It has a sweet taste and is served with shime saba (mackerel) today. Also, I learned from the greengrocer today that "Nameko mushrooms roasted in a toaster oven" is also a snack. There are many choices in Nagano and Niigata, where mushroom cultivation is very popular, but today I chose large nameko mushrooms from Nagano. The nameko mushrooms are spread on aluminum foil and grilled in a few minutes, then eaten with wasabi shoyu or ponzu sauce. It is a perfect snack with sake!

Not sure if this is the first time I've seen this... I think it is a daiginjo and beautiful. I think it is a beautiful daiginjo. I think I could feel a bit of bitterness... It is difficult to judge this with only a cup of sake. I will try it again next time.

From Oguro Brewery to DHC Brewery. It is dry and robust, but the aftertaste is short and refreshing. It doesn't feel thick. It's a solid, clean drink. It's hard to explain. Anyway, it is delicious! For some reason, DHC Brewery has tasted it many times at the tasting corner of Ponchukan, and we support them!

First time I've seen it. It has a richness and umami like smoked cheese. It has a peculiar taste, so I tried heating it up halfway through, and it went well with it. I think it's a habit, but I need to learn if I'm right... I imagine the habit becomes rounded out with warming.

For some reason, Mt. Myoko is often drunk at Ponshukan. It's a good cost per coin. I tried it heated today, and it goes well with warmed sake. It's hard to describe it as cashew nut-like, but the sweetness and umami came out nicely when it was heated.

It is limited to 600 bottles and was sold after the master decided that it was "time to drink it now! The brewer decided to sell it after deciding that it was the right time to drink it. I tasted it and decided immediately. It is easy to drink with a refreshing 15% alcohol content. I tried to drink it with white sashimi, but my son ate all of them. My family said it was a little sweet. It seems to be aimed at young people who don't have much experience drinking sake, but I enjoyed it with light Japanese food. I think I will finish it soon...easy to drink = drink quickly.
