This is a unit work of three breweries in Joetsu: Katafune (Takeda Sake Brewery), Koshiji-no-Kenbai (Kubiki Shuzo), and Chiyonomitsu (Chiyonomitsu Sake Brewery). Kura-kept yeast, fresh yeast, and shibari. The proprietor introduced that there is a new trial in Niigata as well. Delicious! It starts with a light sweetness, followed by acidity and a sharp bitterness. This complexity is good. I couldn't take my eyes off of the sake from Joetsu. There is a recommendation from Takeda Shuzo on the back label, which is also interesting.

This is the one we always drink at home. It is an excellent product that made us decide to make it our regular sake. It is ordinary at room temperature, but when it is cooled down, it has its true flavor. It easily reaches the throat and has a very fruity sweetness and rice flavor. The good thing about this sake is that you can taste it even after the second sip. The first sip of so-called "delicious" sake is the best, but the second sip is tasteless (laugh). Like the Kubota I had the other day. So, Nakabeni has now taken on the great responsibility of occupying a corner of the vegetable room in our house. I first encountered Kubiki Shuzo on the recommendation of a relative's aunt. I was interested in the brewery because of their excellent kasumi sake.

Usubeni Junmai Unfiltered Nama Sake Goes well with refreshing salads. Elegant aroma, freshness. But it has depth in the back. Great with burrata, fruity tomatoes, and arugula salad.

The snow has already disappeared from the lower elevation ski areas, Echigo-Yuzawa. Today, we have a bottle of Echigo-Yuzawa Benibai with a cute label. It is made from 100% Gohyakumangoku rice produced in Kakizaki, Niigata Prefecture, 60% polished rice, 16% alcohol by volume, and requires refrigeration. It has a sourness and a little bit of a "splash" feeling. It has a high aroma and is very refreshing. Today's snack was silken tofu with salted black pepper and olive oil. It is an Italian dish, but it goes well with it. I wonder if my life of unlimited sake selection will soon come to an end!

I bought it at a fashionable liquor store (Nemoto Sake Shop) during my trip to Sapporo. It's not from Hokkaido, but I was attracted by the spring-like label. It tastes sweet and sour, easy to drink and charming! I'm sure I'll have a good night's sleep again today 😴.

I really like the color of the label (≧▽≦), it's a pretty pink, current color...and the taste is also very spring-like with a hint of brightness! It goes well with both bonito and rockfish! Heisei Meisui Hyakusui (100 best waters in Japan) Made from Oideguchi spring water At first, the sourness is mixed with a hint of bitterness It rides on the tongue. First of all, the label is super cute! Lovely! The taste is also very good! I think it is similar to Kaze no Mori no Hanabi, but with a little less alcohol. It is a dangerous drink that is so delicious that I gobble it up. I would like to try it with sashimi such as horse mackerel, yellowtail, abalone, etc., nameko mushrooms, lettuce salad, etc., though not saury!
