I'm drinking Kozan for the first time.
There seem to be various kinds of sake, and the most popular ones are "Samban" and "Corporal".
I heard there is also a back side.
Oh no, I had no idea...
This Sanban is made from Miyamanishiki and is quite fruity, sweet and sour.
It is a very fruity, sweet and sour sake, but at the same time, it is refreshing and clean.
I want to be more conscious of this sake from now on.

This one is very fruity with moderate sweetness, acidity, and lingering aftertaste 😋! The brewer of Chikumagari-Nishiki said "Please push Sagajo Shoten to carry this ❗" and when we visited the store the next day, they said they will start carrying it 😊This was the first unveiling ❗We are looking forward to the future 😉.

It's a Kisenji sake event! This is a super dry version of Kizan!
The label on the back of the bottle makes it look special and delicious 🎵.
Oh, it is indeed very dry! It tastes great with seafood even in Nagano Prefecture where there is no sea. ‼️ I'm sure it goes perfectly with the mountain food in Nagano Prefecture 😉.

I wandered around the liquor store and bought it because I wanted a dry sake, it was Yamae-Nishiki, and the label was cool.
I wanted something spicy after a long day of mellow and sweet sake, so I opened the bottle.
The aroma was slightly citrusy and sour.
When you drink it, you can feel the alcohol, sourness, and umami. There is a slight bitterness in the aftertaste. It is crisp and easy to drink.
After opening the bottle, the overall impression may not change significantly. The umami and acidity seem to increase. It is a perfect food wine, and is best served with light meals. It is a perfect match for light simmered dishes, and goes very well with them.

I didn't drink the omote which is supposed to be sweet too, but I suddenly went to the back 😋 It was crisp, deliciously dry 👍✨.
White wine-like mouthfeel.
Fresh, light and juicy.
Elegant sweetness spreads over the tongue like syrup.
After swallowing, you will notice a citrus acidity with a slight melon-like sensation.
The salt from the meal loosens it up and gives it a soft umami flavor.
The pull is pleasant.
A modern and refreshing sake.
Isobe-age (fried seafood) and this sake are a perfect match.
The rest...I can't get enough of liver cooked at low temperature by itself!

Today I bought this at Kinase in Mito.
It is "Kiyama" from Saku in Shinano Province.
It's good. Like the line in Red Pig, "It's good.
