Jyuseki Shuku Junmai Ginjo Fuyu Nigori
Another nigori today. It is said that the production of this sake was very small. We will be thankful to have it mixed with orikori.
We will drink it cold.
No gas sound when opening the bottle and no bubbles in the glass.
The color is a cloudy white with yellowish tints.
The top aroma is green apple-like.
The mouthfeel is silky and flows smoothly.
The hint of koji aroma is gentle and fluffy, and the silky oriki on the tongue has a slight sweetness and a gentle, refreshing acidity.
The mild rice flavor of the lingering ori, followed by a bitter bitterness, is lost.
It is a well-balanced sake, with no outstanding five-flavor characteristics, but rather a solidly orthodox taste.
Ingredients: Rice (domestic), Rice Koji (domestic)
Rice used: 100% "Shuku" rice produced in Kyoto
Polishing ratio: 60
Alcohol content: 16%.
Obtained from Kadoya Sake Shop's hanpukai
A clear ginjo aroma reminiscent of green apples.
The smooth mouthfeel is followed by a firm rice flavor and a soft sweetness, which finishes with a lingering acidity.
It is one of the advantages of the hanpukai that you can find sakes with flavors you don't usually buy.

I never saw or knew about this sake in my hometown.
Not spectacular, but calm.
It has a perfect balance of sweetness, umami and astringency.
Sake as a souvenir makes me happy!
Towashi no Winter Nigori ☃️
Mix well with orikori to make a light nigori and serve cold or chilled 🍶.
The appearance is mist white like the mist of the Kamo River on a winter morning, with fine streams of tailings visible.
The aroma is mildly sweet and refreshing.
The aroma is a selfeil with sweet notes of pear, melon, banana, and a refreshing volatile aroma.
The rice aroma is freshly pounded rice cake with nuances of koji acidity.
Smooth and silky on the tongue with silky tailings.
The soft sweetness is subdued due to the involvement of the tailings, and the gentle acidity, including pleasant stimulation, spreads softly with a firm umami.
The umami of the rice can be felt in the fluffy flavor, with a slight bitter edge, but it also fades away with a whiff.
The finish is crisp, with a moderate lingering aftertaste accompanied by a modest scent of returning tailings.
There is no impact or surprise on the palate, but after a few sips, you will nod your head and raise the corners of your mouth in delight.
Delicious.
Gentle yet firm.
It is not the type of sake that will erase your presence even during a meal, but rather the type that will accompany and enhance each other.
It went well not only with scallop sashimi, but also with takoyaki and gyoza.
My wife seemed to like Towashi as well and told me not to drink only gorgeous fruity sweet and tasty sake 😅.
I think I'll buy some clear sake of Juishi next time 🍶.

Jyuseki has been a hot topic for a while now. I drank it outside, but this is my first time drinking it at home.
It is said that all sake is brewed with a special emphasis on Kyoto products.

The balance of sweetness, acidity, and bitterness is wonderful.
When mixed with the lees, the bitterness is a little more noticeable, but it is dry and can be drunk easily as a mealtime sake.

At Agiyao, Kyoto City, Kyoto Prefecture, snacks are kokope crab and sudachi. Year-end party with friends. It was a refreshing drink and went well with crab!

For a friend's birthday celebration,
I bought this one made with "Shuku" (celebration) grapes grown in Kyoto Prefecture.
Personally, I think I like it better when it's fresh and less umami.
The mouthfeel is delicious, with no cloying taste! The freshness of the sake is well expressed, and it seems to be a middle-of-the-road sake that will not interfere with any dishes. As you continue drinking, the spiciness and the ginjo taste come out.
