Iwatoyo is named after Yutaka Iwasaki, the second generation brewing director.
This is an unfiltered, unfiltered, special junmai sake made in the Ikamoto style by Niigata Daiichi Shuzo, a mountainous brewery.
The aroma is like cream cheese with a refreshing sweetness.
Matured in snow cellar storage.
Mellow and soft on the palate.

Drink at home. A slight foaming feeling immediately after opening the bottle. Sourness and a little bitterness later. Smooth, refreshing and easy to drink.
ALC 16 degrees. 60% polished rice.
It has a fruity aroma and is not too light to drink.
You can also taste the rice and the pungency of sake.
I was told that it gets better after a week or so after opening the bottle, so I'll only have one glass today and the rest in a few days.

It has a unique aroma.

When I drank it after leaving it at room temperature, the sweetness came out and it changed to an angular feeling.
When I warmed it up, the sourness came to the nose, the sweetness was emphasized, and the bitterness disappeared.
I drank it cold, but it has a strong flavor and taste typical of the sake, but it has a mellow and gentle taste that soaks into the body. It's easy to drink even though it's very strong.
Even when warmed, the flavor swells up and the taste is easier to identify.
I would buy it again if I see it again.
