The sake is made from raw yeast without "yellow koji for shochu" or "white koji for shochu," and uses "non-standard rice hulls that are not distributed in the market. We challenged ourselves to see if we could still make a delicious sake. The melon-like aroma is quite strong. It reminds us of the spiciness of shochu (rice malt for shochu). The aftertaste is rich like old sake. I would like to drink a regular "Hatsushibori" someday.

This is the first time for me to drink this brand. To be exact, a friend of mine brought a bottle of Tsuchida Namikawashiroshi to a camping trip, but I was too drunk to remember what it tasted like.
This sake is a challenging sake with 12% alcohol by volume and 90% polished rice. It has a wild rice flavor with a hint of acidity afterwards. I didn't know such a sake existed. Amazing!

Refreshing aroma with a hint of vinegar. The light sweetness is followed by an intense and full-bodied acidity. The not-too-heavy mouthfeel and refreshing aftertaste make it a good match with food. Today I served it with horse mackerel sashimi.
While drinking it, I felt like the rainy season was over.

The clean aftertaste is not so much sharp as it is gentle all the way through, with an image of a quick receding.
Recommendation! Quite peculiar, but easy to drink with a good balance of acidity and flavor. Easy to match with any snacks, but maybe not with acidic ones. Stewed dishes.
