I will not drink from the brewery of Kiyomasa Kato's descendant for a while, but I will devote myself to conquering all the breweries in Yamagata.

At room temperature. The aroma is definitely fruity, like banana. I don't like sake with a strong aroma, but I like this one a lot. The package is cute and I recommend it as a gift.
For the next sake, my brother requested a dry and clean sake, and the sake we chose was Junmai Daiginjo-shu from Koigawa (Koigawa).
It was my favorite type of sake and was quickly consumed 😜.

R1 bottled Koikawa. At room temperature, it has a strong sense of maturity.
When warmed, it has a strong sense of sharpness at higher temperatures, but as the temperature drops, the balance between umami and sharpness, including a mild sense of maturity, improves.
Purchased during a visit to the Umegawa liquor store in Shonai-machi. Classic standard junmai sake. A junmai sake with moderate body and a hint of rice sweetness. The current head brewer seems to be sticking to this style, which warms up quickly. There are many modern styles of sake in Shonai, as well as some that are light, tasty, and beautiful in keeping with the refined food culture of Tsuruoka-Sakata, but I think this one is really more along the lines of a classic.
It seems to be the most standard among the brands, and I would like to try something different in the future.
