The tankoba kumi was brewed by a young toji, Yuichi Tanaka.
It was an easy-drinking sake with a fresh aroma and a refreshing mouthfeel.
Even though I was going to stop at one sake cup, I couldn't help but pour more.
I think this is a quality finish that will revive the sake brewery, Niigata.
Scent first. It has a hard aroma.
When you put it in your mouth, you can feel the sweetness that is typical of kafuda-shu, but as the aroma suggests, it has a hard mouthfeel.
Then, there is the umami. It is surprisingly strong.
Finally, there is a light bitterness.
It is a good sake.
There is a sense of gas.
The nose has a subtle ginjo aroma.
Fruity, juicy, fresh and sweet, with a hint of white grapes and white peaches, and a moderate acidity.
There is a sense of minerality.
Light and refreshing with a clean aftertaste.
Easy to drink
Compared to BRILLIANCE's Koshi-tanrei, the first half of this wine has a broader flavor, and the second half is clearer and sharper.

It tastes light and refreshing even though it's a packaged sake.
