A second meeting for one person while waiting for the train.
It was my first visit to the restaurant since it moved to a new location in Niigata Station, which made it a little harder to stop by. Mr. Boken, who is as energetic as ever, welcomes us.
After checking the freshly squeezed sake recommendations, I chose the ayu (sweetfish) Masamune.
He was drunk, his nose was silly, and he was calm.
It is fresh, rough, and heavy,
Slightly sweet with a touch of alcohol,
The aroma is gorgeous, and the bitterness is refreshing.
The bitterness is also slightly refreshing,
It has a rich and powerful umami flavor, and while it is very drinkable
It is easy to drink with its rich and powerful flavor.
It has a lingering aftertaste,
It is a sake to be drunk slowly and deliberately while enjoying it.
Even a drunk person can understand it. It is delicious.

Junmai sake stored in cedar barrels. The refreshing aroma of cedar will fill your nose and mouth.

Drinking comparison, again, I asked for it.
Both Jinya and Toyobai were very tasty.
I would like to keep in mind that this one is less carbonated and less acidic, but has a stronger and thicker body.

It's been a long time since I've had this sake. It is a new sake, so I didn't hesitate to buy it.
The freshness, umami, spiciness, and sweetness of new sake mingle with the heavy feeling of the original sake.
By the fourth day, the sake's hara-sake character came to the forefront, but I kept it cold until the end.
Maybe I should have tried heating it up a bit.
Ayu Masamune Oorigarami.
The day before yesterday, I saw it at "Yoshiike" in Okachimachi and bought a packet.
It is 6% low alcohol, slightly effervescent, and has a refreshing sweetness and acidity.
It is good as an aperitif, and if you have it at your dining table or banquet table, it will be a refreshing and gorgeous start to your meal.
I enjoyed it with tonkatsu (pork cutlet) and fried oysters.
At Yoshiike in Okachimachi.
It has a good aroma of alcohol, which is typical of honjozo.
It is light and dry at first, but gradually sweetness comes gradually.
The sharpness is also excellent.
It goes well with grilled salmon.
