Normal rod
The color was the same as the Ikeda rod, and when you put it in your mouth, it was light and shrieky and tangy on the tongue, and the taste was mellower than the Ikeda rod.

The aroma is reminiscent of rum and on the palate, there is a subdued sweetness followed by a slight bitterness.

The color is clear and the aroma is not so strong.
The palate is slightly tangy and fizzy, followed by a mellow white wine-like flavor.

We received our second bottle of Sogapère Ephis this season.
Since it is a liquor made by a winery, it is in the style of a wine bottle with a cork stopper. It comes in a 750 ml bottle, the same as the wine, which is a nice touch.
The last time I drank this wine was with Numeroin No. 1 yeast, and this time it was with Numero Sisu No. 6 yeast.
We were fortunate to be able to purchase two bottles of Sisu, one normal lot and one Ikeda lot. The first bottle we opened this time was the Ikedalot, made with Miyamanishiki from Ikeda Farm.

Sogapère Ephis has a quality assurance period specified by the manufacturer, and if it exceeds the period, it may have a "super-geeky aroma and taste". The flavor is more rounded than when we tasted it, and the greenish taste of youth seems to have mellowed. The complex flavor of the sake's traditional sake yeast yeast yeast has been deepened, making it a perfect match for the expression "a scenic sake".
I got it about a month ago and have been playing it. It's a Sogapère Ephis. I opened the bottle and thought, "This time it's yeast No. 6, so I can only hope for the best.
The label on the back of the bottle says, "Sake with a decadent aroma that has gone through painful longing and mad love (middle part abbreviated). I have not heard the word "decadent" in a long time, but the acidity and umami have a wine-like matured feeling...is that what it means? Is it erotic or not?
This sake is made at the winery during the period when wine cannot be made.
The rice used is 100% Miyamanishiki produced in Nagano Prefecture.
The sweetness and spiciness come together as one...you can feel them rushing toward you.
The aftertaste is slightly acidic and spicy, and the sake is light and refreshing without being harsh.
