When it was first released, I saw some reviews saying it was still hard...so I let it sit for a bit. I wonder if the flavor is ready to be put into the bottle.

The aroma is sour, like a white wine. When I smell it from the glass, it has a sweet muscat flavor. It is a little bubbly in the glass.
When you drink it, it is less acidic than the aroma at first, and has a light richness and a light sweetness. It is like being surrounded by grains of sourness. The taste is gradually sweetened, and finally, it is tightened by the acidity.
The wine is full and balanced, yet smooth and weightless throughout, which is a consistent feature.
The next day, the piquancy is gone, but the juicy richness has increased. The wine becomes a little richer, but still has a refreshing, skilful freshness that can be taken to be herbal.
The day after that, it becomes a bit sweeter. For my personal taste, the flavor itself seems to be getting on top of itself right after the bottle is opened.
I was wondering what to do this year, but I'm glad I got it. It was very tasty.
...I drank it so fast that I forgot to heat it up...even though it is a sake made from the same sake yeast....

Very moderate sweetness, makes you understand that sweetness should be this much. And the characteristic acidity... As the temperature rises, the sweetness comes out as usual, but I would like to drink this sake cold. It is hard to find, but I can understand why it has a strong fan base. It is delicious! I want to buy it as soon as I find it. I seem to be under the spell of Sogape too!
I went to Echizen Sake Noten Hayashi with the intention of stocking up on about three bottles of undrinkable sake. It's a magnum, so the shape is different from other bottles and it really stood out... Apparently there was a cancellation and it was a miracle that I was able to pick it up 😂I was seriously close to buying it because I hesitated to buy it for a moment...
I thought it was a progressive sake, but it's insanely sophisticated! Like Tenpyo from my hometown Nishi Brewery, I can see how a brewery that has reached the top of its game in a certain sake category can apply its know-how to other genres of sake as well!

This is the first time I've had anything other than the Sogaper Ephis No. 1 and No. 2 yeast brands, Ilya Thornton 🍶Numerosis, which is probably the most widely available: ☺️
I have the impression that it has the aroma and taste of traditional sake, as it is a more classic yeast among sogas.
The sweetness is low and clear, and the alcoholiness is quite apparent. The acidity is effective right after taking a sip, and the umami spreads later. It has a long aftertaste.
The classic, yet clean, taste-free structure is what you would expect from a popular sake 😄.
This SAKE is made in a very small quantity in a small winery as a hobby, with all the Obuse Winery staff away from winemaking only for a few weeks when the snow and bitter cold prevent them from working in the vineyards.

Sogga Pere et fils "Le Sake Erotique" Numero Six.
Sogga Pere et fils produces only about 7,000 liters of this wine during their winemaking holidays in Obuse, and this year we were lucky enough to find a Numero Six made with yeast No. 6. This year we were lucky enough to find a bottle of Numérosis made with No. 6 yeast!
The nose has an apricot-like nuance with a hint of muscat, and the lactic acidity from the sake yeast invites you into the labyrinth between white wine and sake.
The sake rice used based on a single variety philosophy similar to that of Burgundy wines is all Miyamanishiki from Nagano Prefecture, and this is Domaine Ikeda lot, but it is a magical Ikeda rice that is tighter and slenderer than usual. The taste is exactly as it should be, with mild sweetness and tightly concentrated umami, but above all, an elegant acidity. The bitter taste is accompanied by an astringent bitterness that gives the wine a complex aftertaste.
It is a unique taste!
