Joyo Junmai Ginjo Aizan Unfiltered Nama Sake
This is the second bottle I bought at the brewery. I've been paying a lot of attention to Joyo, especially to their sweet sake, which I think should sell well.
The long description says that it is made from 100% Aizan from Yoshikawa-cho, Miki City in Hyogo Prefecture's Special A district, and when you find Aizan in a draft sake, you have no choice but to buy it.

I will have it with cold sake.
The microbubbles are only faintly visible on the glass.
The color is clear and colorless.
The top aroma is mild, with faint hints of peach and melon, and a little alcohol.
The mouthfeel is fresh and slightly gassy, but not too assertive.
On the palate, a clear and gentle sweetness flows smoothly, followed by a fine sweet bitterness, and then a firm Aizan-like bitterness that lingers pleasantly as the sake is swallowed.
The aftertaste is a beautifully bitter, rising bitterness.
Yes, it is delicious 😋.
Joyo has a clear impression without much bitterness, and is orthodox and smart.
As the temperature rises, a bit of citrus acidity comes out.
Ingredients: rice (domestic), rice malt (domestic)
Alcohol content: 15%.

Although it is a very dry sake with a sake meter of +10, I did not find it too dry, and the umami of the rice prevailed and made it delicious.

Today's sake is also purchased from the brewery 😀.
As you can see from the picture, it's a very thick and serious sake😇.
The brewery didn't have a tasting, so I thought it would be fun to buy it and take it home 😇.
It has a strong mouthfeel, sweetness and umami taste, just like the amount of the cage 😀.
But no matter how much I'm not a fan of taste, I can't really taste the rice flavor 😅.
I looked closely and found that this was an alcohol-sweetened sake 😅.
I assumed it was a junmai type nigori with this appearance and the amount of lees 🤣.
It was a delicious sake, but not for my family who likes the robust rice flavor of nigori 🤣.
I would recommend the fruity taste even if it is cloudy, but for those who want to feel the rice flavor, it might be a little bit different 😀.
If you don't have any preconceived notions, it was a delicious sake 😀.

This sake had me firmly fooled 🤣.
It was a standing nigori with a strong sense of rice, but a fruity, dark, sweet and delicious mouthful was waiting for me 🤣.
