Although it is a very dry sake with a sake meter of +10, I did not find it too dry, and the umami of the rice prevailed and made it delicious.
Today's sake is also purchased from the brewery 😀.
As you can see from the picture, it's a very thick and serious sake😇.
The brewery didn't have a tasting, so I thought it would be fun to buy it and take it home 😇.
It has a strong mouthfeel, sweetness and umami taste, just like the amount of the cage 😀.
But no matter how much I'm not a fan of taste, I can't really taste the rice flavor 😅.
I looked closely and found that this was an alcohol-sweetened sake 😅.
I assumed it was a junmai type nigori with this appearance and the amount of lees 🤣.
It was a delicious sake, but not for my family who likes the robust rice flavor of nigori 🤣.
I would recommend the fruity taste even if it is cloudy, but for those who want to feel the rice flavor, it might be a little bit different 😀.

This sake had me firmly fooled 🤣.
It was a standing nigori with a strong sense of rice, but a fruity, dark, sweet and delicious mouthful was waiting for me 🤣.

Joyo Expressive Unfiltered Nama Sake
Last week, I went out with my oldest son and his wife on the pretext of going to see ume plum blossoms in Aoya. On the way home, we stopped by Joyo Sake Brewery. Of course, this one was the real deal. I took my wife as a driver, and we went to the sales place to taste a lot of sake, but there were only two kinds, but the plums in front of the brewery were in full bloom and lovely.
We had it cold.
There was a short gasp when the bottle was opened.
The color is a clear, almost indiscernible yellow.
When poured into a glass, countless bubbles adhere to the glass and come up petite.
The top aroma is mild, but there is a thick honey sweet aroma from the back of the bottle.
The mouthfeel is pleasant, with just the right amount of gas that stimulates the tongue and elegant acidity. The taste is gentle but has a mellow umami with a strong presence, matched by a sweetness wrapped in acidity.
It has a sweet mouthfeel with a calm fruity and umami flavor, but the acidity keeps the sweetness from lingering.
This was also my favorite type.

Compared to the previously posted Joyo Junmai Ginjo 55 Yamadanishiki, this one has a fruity aroma and a full sweetness in the mouth. The acidity is crisp and the bitterness is also very crisp. However, the sweetness makes it easier to drink, and I personally prefer this one.
Sake given as a Kyoto souvenir, marked on the box as Kyoto-only.
It has a muscat-like aroma on the nose, and the gas in the mouth is very lively. It is a dry sake with a sharp acidity that takes center stage from the umami, and the lingering bitterness is short-lived.
