This time it is Joyo's Autumn Sake, from Joyo City in southern Kyoto.
On a day when I finished work early,
I had never been to Joyo Sake Brewery before.
I decided to take a drive to the sake brewery.
Steam was gushing out of the waterway of the brewery, giving the impression that the brewery was in the middle of preparing sake.
Next to the brewery, there is a direct sales shop,
The shopkeeper explained the various types of Joyo sake to us in detail. While being recommended the new sake, I decided to take some autumn sake home with me this time.
Cold sake.
Gentle melon aroma.
After a fizzy, fizzy feel on the tongue, the aroma containing nuances of melon and flowery aroma gently passes through to the nose, and the soft umami flows quietly. The bitter aftertaste gradually takes effect, leaving the palate refreshed at the end.
It is a light and refreshing sake with a soft umami typical of Kyoto. I prefer it cold or at room temperature.
I found some deep-fried wakasagi (Japanese pond smelt) that had been in the freezer during the cleanup. It went well with the fried chicken...a good end-of-year accompaniment.
Joyo Sake Brewery is located near the Aoya Plum Grove and has a wide variety of plum wine.
There are many plum trees right next to the brewery,
I would like to visit again in early spring to enjoy plum blossoms.

I love the steam from the steamed rice. ☺️ I can't wait to visit a sake brewery on a whim.
I'm sure you are a great person to select autumn sake instead of new sake, but it was for cold or chilled sake. It's very deep 🤔.
