This is Sairai's first special honjozo sake.
By adding a small amount of brewing alcohol, the sake is made to resemble daiginjo-shu, bringing out more aroma and sharpness.
This bottle has an elegant aroma, fresh sweetness, and sharp acidity. It is also reasonably priced.
Sairai" comes to our house from Sai-no-kuni......for the first time....
The first sip is quite sour.
As you take two or three sips... and drink more...
You can feel the sweetness and umami in the back of it.
Combined with the label design
It seems to go well with French and Italian cuisine as well as Japanese cuisine.
16°, 50% rice polishing ratio, Junmai Daiginjo specs.
Slight chili, very thin ori, delicate attack, fruity and juicy, clean sweetness with delicate acidity and a bitter taste that cuts through nicely✨.
Nice relationship between sweetness and acidity 🤗.
Evening breeze is a nice name, is it a summer sake 🎐.
As the day went on, the umami got stronger and more robust 😋.
Lunchtime drinking!

Delicious as always!
My friend who went with me said
said it was too rich and left a lingering taste on the tongue.
I don't get it at all.
I don't know if my tongue is buggy or what...
fruity flavor
Sweet aroma, thick attack. Fruity and umami mouthfeel. It is easy to drink and leaves a lingering aftertaste in the throat.
It is a stylish umami-guchi sake 🤣.
