It is a springtime sake with orikarami dancing in the air.
It is a delicious sake with a subtle ginjo aroma and a sweet taste in the mouth, but with acidity and the unique stimulation of nama-shu on the tongue.
Today's sashimi platter includes kanpachi, salmon, and mullet,
Kanpachi, salmon, mullet kombujime, seared Spanish mackerel with salted lemon, firefly squid... I forgot to take a picture of them, but there was a piece of each left 😅.

Champagne and strawberries. Such a pretty yet rich feeling sake. Sourness and gasiness like fruit punch and sweetness of rice. Naruto sea bream nigori foam was also pretty like this 😍.

Sairai sara" is a limited distribution brand launched in 2018 by Kitanishi Shuzo in Ageo City, Saitama Prefecture.
The "sara" is named after "Sai-no-kuni," the nickname of Saitama Prefecture, and means "the arrival of sake from Sai-no-kuni that will change the world.
The concept is "the harmony of three elements: aroma, sweetness, and acidity. We aim for a graceful ginjo aroma, a taste of umami and sweetness of rice that spreads to the palate, and an elegant acidity that gives the sake a crisp, clean taste.

It is not too much to say that I came to travel to Saitama Prefecture for this Sairai.
The red label on the black bottle is cool.

Sairai, special junmai was opened 🎉.
Today we opened a bottle of my favorite Sairai 😆.
It's a hard to find Sairai, so I always have high expectations for it 😍.
I'm excited to drink it again 🥂.
First, the aroma.
Not much of an aroma.
When you put it in your mouth, you will first be hit with a berry sweetness. The rice flavor follows it, and then the acidity follows it.
The three combine to complete the deliciousness. ‼️
The aftertaste is crisp and refreshing without leaving much of a lingering aftertaste.
It's delicious 👍Yes😋😋😋😋😋.
Coherent and easy to drink🍶.
It's quite well-rounded and beautifully easy to drink 🥰.
Not too sweet, just right for a mid-meal drink.
Well made and well balanced.
A little more fruity and sour in my opinion 🧐.
But maybe this is more to everyone's taste 💕.
I preferred this special junmai label🩷 to the standard sake light blue label🩵 we had last time: ❣️
Once again, I realize how different the taste can be depending on the rice and the production method.
Maybe comparing the same brands is one of the ways to enjoy them 😆.
The next Sairai Spring Sake is waiting in the wings at my house 🤗.
I have high hopes for Sairai again 🙌

Sairai is one of my favorite sake too, but I have to be brave to buy it in Kansai because the distributors are a bit out of the way and you have to go far away to buy it 🤣.

I haven't had a Sairai for a while 🤔 and I looked back and found that the last time I had the same one was 2 years ago 😌 I went from sweet to sour to delicious to bitter and it was thick, refreshing and had a punch! I don't know what that means😅.

Mike Bubble 🫧 Sweetness is mild, slightly acidic and dry.
The lees mixture adds fullness and mildness.

There was also a limited time sake available, but we bought a bottle of Junmai Ginjo with stable flavor.
