Message from the brewer
Thanks to your support, "SAIRAI", which was born in 2020, has now been five years old.
This time, we have adopted a new yeast to introduce a "new Sairai" and aimed to create a richer aroma.
We have brought out the core of Omachi through thorough low-temperature control to achieve a rich aroma, fruity sweetness, and a neat aftertaste.

This sake has the complex sweetness and umami that only unfiltered, unpasteurized sake can have, yet it is surprisingly light and easy to drink. The sharp acidity vividly outlines the flavor profile, and the freshness of the sake rushes down the throat. The refreshing mouthfeel is followed by a clean and crisp aftertaste. It has both the drinkability of a pure sake and a refined lightness, and is full of the transparency typical of Sairai. It is light, sharp, and has a slightly complex taste.

The aroma is lactic and alcoholic. In the mouth it has a mild sweetness and sourness, and the spiciness fades away with a little bit of residual spiciness.
