We had a rare local sake from Ikoma, which is the general's favorite ❤️It was so delicious with a clean taste ‼️It was a great pairing with the chochin, another rare part of the restaurant!
I couldn't help but take a bite out of the "Direct from the Sake Brewery" POP.
The mouthfeel is soft.
The alcohol is tangy.
It matches well with the taste of sea bream konbujime.
It is sweet.
Perhaps because it is a daiginjo, it leaves a sour and slightly cloying aftertaste when drunk alone.
However, when paired with a meal (especially one with a strong flavor), the acidity and other tastes disappear, leaving behind an aromatic sweetness.

Tingling alcohol in the mouth.
Light on the palate. A little sourness.
It tastes like a flavored butou, but it doesn't taste fruity.
After a while, you can feel the richness.
After ordering my favorite boiled rice, I think I will order octopus vinegar.
This is the first time I've encountered one that says "alcohol content plus one." LOL!
As for the taste, it has a tangy aroma and taste that you can tell it is aluzoe, but it is great because it is paired with the zakzaky seared eel.
It is definitely not a sake that goes with everything, but it had a good assertiveness to go with something with a strong flavor like eel.
