All of the Yamadanishiki produced in Hyogo is used, and the rice is polished until it reaches 35% and carefully brewed so as not to crush it. Unlike Junmai-shu and Junmai-Ginjo "Kinokuniya Bunzaemon", which have a subdued aroma and emphasize flavor and taste, this Daiginjo has a gorgeous and elegant ginjo aroma and a coherent taste that makes it easy to drink.

The aroma is clean and almost scentless.
The palate is clear and has the fullness of Junmai, but there is a crustacean-like flavor like prawns that has a unique presence that has never been seen before.

I just went to Wakayama City.
I brought back some sake from Kainan City.

It is good for everyday drinking.

For some reason, it smells very much like alcohol.
The bitterness that follows the sourness that spreads at once. Then, the umami of rice covers it. It finishes with a lingering umami taste.
I had it at room temperature, but it might be good chilled. So we put it in the refrigerator.
