Clear and colorless, with a face of yogurt, cooked rice, and yogurt. The attack is rather weak, with a firm acidity, dry sweetness and a rather short finish.
Purchased at Seijo Ishii in Nihonbashi.
It is said to be from the sake brewery that was the model for the Natsuko no Sake manga.
I have not read it yet.
It has a clear and crisp alcoholic aroma.
It is light and dry, but smooth and light.
The aftertaste is short and has good acidity.
It is a ginjo-shu that would be suitable as a food sake.
Natsuko sake.
I knew it had been on the store shelves for a while, but this was the first time I tried it.
It is a sake that is easy to drink. The aftertaste is a slight, slight hint of rice...?
The famous Natsuko sake I had high expectations for, but it has a surprisingly normal sake feel. It is not unpleasant, but the bitterness of the alcohol makes it feel like a clean, dry brew. It has a light ginjo color. I bought it because it was supposed to be warmed up, but it is not very good warmed up.
Ingredients: Rice (domestic), rice koji (domestic rice)
Rice polishing ratio 55
Alcohol content 15 degrees
The unique ginjo aroma that bursts in the mouth is so delicate that it is overpowered by the spiciness by the third sip. The pungent bitterness lingers, so if you want to enjoy the ginjo aroma, you must reset your tongue with a chaser.
Sweetness 3, acidity 0.5, pungency 4, bitterness 2.5
Ginjo aroma 2
The sake was refreshing and easy to drink, but it was dry on the throat and very satisfying to drink.
When mixed with the air, it becomes even easier to drink, and you may find yourself drinking too much of it.
Junmai Ginjo Rice
Very heavy. Slightly sticky. I think I should warm it up 🤔? ⤴️When paired with ayu confit and wata, the unpleasant taste disappears and the flavor increases. Even cold sake is softer and easier to drink. Easy to pair with octopus rice, fried chicken cheese, and sweetfish confit👍.
