The label is "Taiyo Umi" by Ito Shinsui, a work sprayed on drawing paper using a sprayer. I would like to see the real thing.
The aroma is like ripe plum and slightly green bamboo.
The taste starts with a light sweetness, followed by a balance of sourness and spiciness. The overall taste is refreshing.
It was perfect as a food sake.

Yokobue, I liked it so much when I tasted it on the brewery tour that I bought it for home.
It was a perfect accompaniment to a family barbecue party.
I was told to be careful not to blow out the bottle, but it opened without making any noise... maybe because it was shaken too much when I brought it home?
Slightly gassy.
The aroma is like sweet yogurt, and you would expect it to be sweet, but it's dry!
It has a refreshing summery sensation and went well with grilled meat.
I also enjoyed the gurgling of the oli, which I couldn't taste in the tasting.
I loved this sake so much that I think my visit to the brewery was worth it just to encounter this sake.

Here, there are 5 types from 6 (one is a liqueur), and the active nigori is poured directly at the reception desk, not from the server.
Junmai Ginjo Yokobue Shirakaba Nishiki.
It has a firm umami, a slight acidity, a slight nuttiness, and a bit of a classical feel.
Ginjo-shu Kodo
It has a mild umami, richness, and a bit classical. It is the same as the one we drank at the Gifu Sake Event.
Junmai Ginjo Yokobue Yamae Nishiki
Smooth, with mild acidity, full-bodied, and a touch of bitterness. A little different from the impression I had before.
Junmai Ginjo Namaishu Natsuhonokou
The main taste is sourness, but it is also a bit complex, and it is not a refreshing summer sake.

1) Junmai Ginjyo Nama Shu Natsuhonokou
This is a summer sake. It has a strong sweet aroma of rice malt...but it is a dry sake. The bitterness and acidity in the aftertaste reinforce the dry impression. A refreshing sake suitable for summer.
Junmai Ginjo Yokobue Yamae Nishiki
Gorgeous sweet aroma of Yamae-Nishiki. It is quite mildly sweet. It has a graininess and a tangy taste. I would like to drink it at room temperature.
Kodo (➂) Ginjo-shu
It has a gorgeous aroma and a little bit of a soaked-alcoholic taste. It has no peculiarities and is easy to drink. It has a fruity flavor and a hot taste.
4) Junmai Ginjo Yokobue Shirakaba Nishiki
It has a sweet aroma like clay and rice malt. It has a watery mouthfeel. The sweetness is moderate and the rice flavor lingers in the mouth for a long time. It is a perfect food sake.
(5) Junmai Activated Nigori Sake
The aroma is like yogurt. The creamy sweetness spreads while popping in the mouth. However, it is rather subdued and very easy to drink.
This is the third of five Suwa breweries. Today is the day of the Suwa Lake Fireworks Festival. This sake is labeled for the fireworks display. We drank it while watching the fireworks on TV. It tasted sweet and sour and was delicious. 946 yen.
