Ito Shuzo (Suwa City, Nagano Prefecture) Yokobue Junmai-shu Alcohol content 15 Rice polishing ratio 65 This is the first junmai sake from Yokobue. Until now, it has been junmai ginjo or junmai daiginjo. This is the best food sake. It is refreshing and easy to drink. I was the happiest of the day when I paired it with stewed daikon radish.

Reijin Shuzo (Suwa City, Nagano Prefecture) The first brewed in 2024. Alcohol percentage 16 Polishing ratio 59 This was my favorite sake that I drank in 2011, so I bought it again in 2012. I bought two bottles and drank the first one in December and the second one in February. The balance between the dryness that lingers in the throat and the sweetness that lingers in the mouth is exquisite. I had an image that it was easier to drink a year ago, but I wonder if it is a change in taste or a difference in age. Either way, it is very tasty.

Maihime (Suwa City, Nagano Prefecture) Shinshu Maihime Karakuchi 100% Miyamanishiki 16% alcohol by volume Polishing ratio 59 It has a full aroma, which is typical of dry wines from Nagano and the Takayama mountains, and a dry but deep flavor. Even those who do not like dry sake can drink it. I like Nagano sake.
