I liked the label "Brewing Forest", but
but now it's reborn as "Yuki no Mayu".
I don't remember enough to compare the flavors, but it's very sweet and tasty!
It has a rice polishing ratio of 60% and 14% alcohol by volume.
It has a slight sweetness with a slight gasiness and a lingering crispness with a slight astringency.
It was a delicious sake with good cost performance.
The brewing forest is
I've been very curious about it, but I've never had it.

I found it by chance at a liquor store in an aeon mall where I sometimes go and bought it on impulse.
It is labeled only as "rice (domestic) and rice malt (domestic)

First "Yuki no Mayu".
I've had a bottle of "Brewing Forest" before, but this is the first time for me to drink it,
But this is the first time for me to drink "Yuki no Mayu".
It was nigori (cloudy),
It was a nigori, but the sweetness was reduced and it was easier to drink.
The hotel offered all-you-can-drink breakfast.
It was great.
I want to drink it again.
When poured, it is cloudy.
The aroma is a fresh, gorgeous fruity type.
The taste is "sweet, full, citrusy, and refreshing acidity.
The acidity stands out while drinking. There is a creamy acidity with a hint of ooziness, but the citric "sourness" is strong. It goes well with mozzarella and cream cheese.
The brewer says that it also goes well with pizza and pâté de campagne, so it may be better to make it stronger in flavor to make it compatible with this strong acidity.
Please try it.
Sweet and fruity aroma. Pear?
Relatively strong gassiness.
Light and refreshing. An aperitif.
The first taste in the mouth is sourness, followed by a moderate sweetness and bitterness.
It does not have much of a sake taste, but more like a sour.
