Even though it is a daiginjo with a 40% Yamadanishiki rice polishing ratio, there is no ginjo aroma and no sweetness. The umami and acidity are very noticeable. According to the brewer, this is what you get when you age it for four years. If you want to match it with fish dishes, it might be better like this.

I have had Tanzawayama from the same brewery, but this is my first brand. The aroma is mild with a hint of rice. It is mellow and a little alcoholic. It is difficult to describe the taste. It is a unique taste.

Takashi Shirataka Unfiltered Nama Sake Sake bought in Odawara, No. 4 It seems to be a very limited edition sake produced in very small quantities. From my daughter who said she wanted to move. She wanted to go to a real estate agent. My wife, Fuku, and I went to see her. We did a little shopping until our appointment. We went separately for lunch and had ramen 🍜✌️ by myself. I had a Jiro-like ramen 😁. (I knew it was a bit different from Jiro 🥲) We had a look at the property, For dinner, my wife wanted to go to Yakiniku King! Lunch and dinner were heavy 😱. We went home and drank Takashi with cheese 🧀. It has a little bit of a hint from the fresh mouthfeel. A hint of sweetness and umami. The aftertaste is crisp and dry with a sour aftertaste. I thought it was a good sake for a meal, and finished it in one gou. On the third day after opening the bottle, after a night shift, we had it with dinner. After all, it is best with a meal 👍. I had a few bottles of Takashi on hand, I would like to try a different Takashi 😊. We lost to South Korea and finished 2nd in the qualifying round. Our opponent in the quarterfinals is Qatar. Totally away 😭 I have to cheer for them even though I have to work early in the morning 💪. Qatar took advantage of 10 chances in the second half. They did well? Somehow? Won in overtime ✌️ Let's win the next game too! Let's win the next game and qualify for the Paris Olympics👍

Takashi found it after a long time. I was so excited that I bought a bottle. I was torn between Omachi and Yamadanishiki, but I chose Wakamizu, as is typical in Kanagawa. The aroma was subdued and refreshing. The sake level is 11, which is very firm. The store where I bought it has a concept of handling only unfiltered, unadulterated, matured sake. It is this season's sake, but it still has a matured taste.
