The concept is to create an original taste that adds lightness and freshness to the "relaxing sake" that the brewery aims for. Enoki Shuzo's regular sake concept, with the exception of kijoshu, has a flavor that is right in the middle of classic and modern, and is very popular as a food sake in Hiroshima.
Koi omachi, sake rice developed by the prefecture, is rare among the farmers who produce it; the Takamiya Sake Rice Division of the Hiroshima Hokubu Agricultural Cooperative, under the jurisdiction of JA Hiroshima Hokubu, grows Yatanishiki, Yatan 35, Senbon Nishiki, Omachi, and Koi omachi, which is the variety used in Hanahato.
Enoki Shuzo is said to be the first brewery in Japan to brew "kijozo-shu" from Ondo Seto, which is associated with Taira no Kiyomori.
Founded in 1899, the brewery was the first in Japan to brew "kijoshu" in 1974, and many people familiar with Hana-ni-Hato are said to think of the kijoshu aged sake that has won the gold medal at the IWC wine competition eight times. The sake is also popular among women in Hiroshima because of its cute "flower and dove" logo.

Very sweet. The aroma is not so strong. The aroma is not so strong, but the taste through the nose is very melon.
It is sweet, but not too sweet, and has a good sharpness. It is rich yet refreshing.
I would like to drink it regularly as a dessert!
The standing aroma is about 7 to 3 of fruit and koji. It has a classical flavor, with a good balance of sweetness, umami, and acidity. It is delicious both cold and at room temperature.

Purchased at Enoki Shuzo's brewery opening. It was my first time to go there, and I was very happy to go, even though I had my family waiting and it was a rushed tasting. I tasted several limited edition brewery opening sake and sake that I cannot usually drink, but I liked this brand the best for me 😆.
I was torn between this and a lees-related sake, but I chose this one because of its high Alc (16.5°).

The green bottle with a green image is very nice.
However, it is not good to put "Unfiltered Nama Sake" at the center of the bottle.

It has a faint odor of fresh Alc, which can be described as the smell of barley watered down with water.
The "piquancy" and "shwashwa" are used a lot in the obi, but it is not so.

The sweetness and the sublimation smell in the middle part of the bottle solves all the problems.

Koi omachi" is said to be a super Sanya-like version of omachi, but I did not feel any omachi element in it.
The main ingredient is the freshness of the raw sake, but the aroma is more important than the taste! I was wrong, I'm sorry!
This is also at a standing bar near Hiroshima Station.
Among the three kinds of sake (on the right), this one was fruity but more classic.
It is not the kind of sake I would choose for myself, but I thought it would be nice to have this kind of sake once in a while, and paired it with seared mackerel as a snack. ‼️

This week, I took Monday and Tuesday as rest days 😪 and welcomed Wednesday! It was raining☔ and the temperature was dropping🥶, so we had nabe for dinner for the first time in a while🍲.
So we couldn't help but drink 😄.
So, Nobby went on an expedition to Ohwada Sake Shop in Tochigi City in search of a dry sake and chose this one🤗Hatsuka Hato 🤗‼️
It's up there in Sake no.11 in Hiroshima Prefecture, but I've never seen this label 🤔I checked online and it's not even on the Enoki Sake Brewery's product list😳 Apparently it's an original brand. I don't know.

I'll take a sip and it's delicious 😋I had a preconceived notion that it was going to have a strong alu feeling, but it has a gentle mouthfeel that gradually spreads to a sour taste that finishes off ☺️ and there's a hint of sweetness in the aftertaste 😚.
This is a bottle that is perfect for nabe (hot pot), and you can enjoy it slowly without getting tired of drinking it, but if you drink it with Otani on YouTube as a snack, it will be gone soon😅.
As it says on the label, it was a "relaxing and comforting sake" ☺️
