Purchased at a sake shop in Nara, which stocks many unique (and perverted) sake.
I had been aiming for this sake for a year.
I struggled with it for a long time when I opened the bottle.
When I turned the cap, it showed no sign of spurting and only bubbles were slowly rising.
I thought it was totally safe...but the bubbles stirred up the lees at the bottom, and the bubbles suddenly appeared and rose.
I was almost blown out.
The color was a cloudy white with a slight yellowish tinge.
The top aroma is softly koji aroma and a little alu aroma.
The mouthfeel is interesting, and from the viscous flow of slurried koji, the tongue feels the stimulation of bubbles that pop and swell up like shwash and moshamosha.
The koji and alu aroma like sweet sake that passes through the nose, and the characteristic mouthfeel is overlaid with a rich umami and sweetness that has quite an impact.
Although it has a sake level of -49, it is not sweet but refreshing, and the aftertaste is surprisingly bitter-dry and sweet-bitter.
It is a unique sake with a nigori (nigori is a color of sake) and kijozo (a type of sake made from noble liquors) character.
Ingredients: rice (domestic), rice malt (domestic), sake (junmai-shu, domestic)
Rice polishing ratio: 65
Alcohol content: 16%.
