Today, Kaorin and I went to a martial arts exo-size and worked up a good sweat, so we wanted to drink a shuwa-shuwa sake, so we opened a bottle of the active nigori sake Kamizo, which was strongly recommended by the Matsui Sake Brewery in Kyoto, which we visited the other day 😀.
The first thing that surprised me was that the tag said to poke the center of the cap with a safety pin to release the air before opening the bottle.
When I poked it with the pin as instructed, I heard the sound of air escaping and was able to open the bottle without any blowout 😀.
It was a delicious sake, with a fruity and fruity taste at first, followed by an elegant rice taste 😀.
As expected, the nigori recommended by the brewery was very tasty 😇

Sake "Jinzo" meets delicious yogurt from Makiya.
Makiya is a representative ranch in Hokkaido. They are committed to "milking cows that eat healthy grass and live a healthy life," and they prepare the environment for their cows not only from the grass they are fed, but also from the soil.
The raw milk of cows grazing in the wide, open land of Hokkaido is professionally transformed into delicious yogurt. And we use unfiltered Junmai sake "Kamizo" for our sake. The fermentation period is 35 days, 1.5 times longer than average, and the sake is fermented at a very low temperature so that the aroma is well developed.
The rice polishing ratio is kept low so that the flavor of the yogurt is balanced with the umami and mellowness of the rice. After bottling, it was immediately stored at ice temperature to keep the flavor intact. After repeated trial runs to find just the right thickness and flavor, a luxurious 60% yogurt was used!
It is smooth, soft and full-bodied. The sourness that peeks out from time to time is a nice accent. It is an adult drinking yogurt that makes you feel incredibly gentle and happy.

I was curious about this sake because of its cool logo. I opened it after venting the sake, but it blew out to the ceiling...thanks to that, it was my first glass, but it was getting low...yuck! It's already the best of the fresh and refreshing sweetness of nama-zake. I love the lightness of the sake, which allows me to drink it all the time.
