Okayama Gozenshu Nigori Sake. This light nigorizake is made from 100% Omachi sake produced in Okayama Prefecture using the Bodeshio method of the Muromachi period (1336-1573). The alcohol content is not as high as normal nigori sake, and it has a delicious green apple-like sweetness and flavor with a slight effervescence in the aftertaste.

The Omachi used for this sake was brewed with Omachi rice that was rejected when it was made to be the highest grade of Tokujo.
That means that it was originally a Tokkagami Omachi ☝️, so no matter what the shape is, the taste is sure to be good ‼️ and I bought it with high hopes 😆.

I bought a repeat bottle of Gozenshu's Bodaihashiro nigori sake at a liquor store near my parents' house.
The first few glasses were served cold. It has a light effervescence on the palate with a yogurt-like sweetness and a strong sourness that lingers in the mouth for a while. I sipped it with a glass of dark liver stewed in wine, and it went very well with the wine.
I was told by the waiter that it tastes great hot, so I had it hot or warmed. I enjoyed the flavor and aroma, but my wife thought it was too much alcohol. We concluded that we prefer it cold.
At the moment of putting it in the mouth, I got a gentle sweet impression reminiscent of a lactic acid bacteria drink and a gaseous sensation slightly tickling the tip of the tongue, but when I downed it, there was a pleasant bitterness, and I could continue drinking it surprisingly easily.
All Omachi sake is brewed with raw rice and soyashi water.
Cold, room temperature.
No particular aroma. It has the same dry mouthfeel and refreshing acidity as the sake we are used to, but the umami and core bitterness come through clearly. The aftertaste is hard, with a hint of natto (fermented soybeans).
When heated, it has a rich sweet and sour aroma and a robust drinking experience, with a lingering, gradual umami aftertaste.
I don't know what's going on here, but it's amazing.

Aroma reminiscent of grape-like sweetness. The sharp mouthfeel gives a sense of minerality. While maintaining the same impression, it has a slightly mellow flavor and is crisp and clean.
The aroma is sweet and the taste is dry. An orthodox impression.
